honey chicken.

Honey chicken, steamed asparagus, and scalloped potatoes for dinner. This chicken is one of my super favorites. Recipe below.
Honey Chicken

1 package boneless, skinless chicken thighs (breasts for a leaner meal), 4 tablespoons butter, 1/2 cup honey, 1/4 cup grey poupon dijon mustard, 1 teaspoon salt, 1 teaspoon curry powder. (For doubling recipe, double chicken but 1 and 1/2 other ingredients ingredients)

Preheat oven to 375, prepare chicken by cutting off extra fat. Place chicken in baking dish large enough to handle single layer. In a small pot on stove over medium heat, melt butter. Add honey, mustard, salt, and curry powder. Wisk until blended well. Pour this mixture evenly over the chicken. Put in preheated oven to cook for one hour. Best with rice and veggies!
